Add finely chopped onion to 2 tbsp oil. Cook in a dutch oven until tender. In a separate pan, cook the bacon, chop it well and to the dutch oven. Add all ingredients and simmer on low heat. After 30 - 40 minutes, serve hot.
If adding ground beef, cook until done. Add in the cooked ground beef in the last 25 minutes.
